Meal Prep Monday: Quick Easy Vegan Meals

The title of this post might be a bit misleading...considering I generally meal prep on Sundays. No need to worry though, whether it's Sunday or Monday, I just make sure I get it done! I've designated Monday's on Style Chic 360 as Meal Prep Monday. These posts will feature a dish I've prepared for meal prep and hopefully inspire you to stay on track! 

As you may or may not know I started meal prepping in 2014. I shared my journey and why I decided to start prepping in a number of posts over the last few years that you can read here.

Since transitioning to a vegan diet last year in March, meal prep has continuously kept me on track. Don't get me wrong sis, sometimes I don't feel like it and may not even bother; but man do I suffer when I do that. Plenty of times, I've learned the hard way just how important it is to be prepared with food and snacks, the vending machine gets all too real when you're hungry and have no food. Being vegan, eating on the go can sometimes be a task and I don't want to be caught slipping.

Preparation and preparedness is a must!

This weeks meals include: 

Topped with banana and strawberries.  

For lunch: Homemade BlackBean and Oats Burger with a side salad 
(will share recipe soon)

 Dinner: Sweet Chili Cauliflower Wings (recipe shared next Monday), Terayaki Cauliflower Rice and beans.

Meal prep is LIFE! It's become a part of my routine and I don't know where I would be without it. It generally takes me an hour or two to prep and I'm all set for the work week. It saves me time, money and effort in the long haul.

Excuse me as I try not to nibble on anything...we'll see if I last. HA!
